have a relaxing weekend

happy friday friends!

this was a good week – wrapped up some projects, had a nice dinner out and didn’t miss my yoga, but i am glad the weekend is here. have a good one!

caicos cafe

last night we went over to caicos cafe for dinner, it’s my number one restaurant in provo – i love having a glass of chianti and dinning on their outside seating area, their friendly staff and knowing that i will have a great meal every time i go.

we shared the sea scallops with almond herb and pancetta crust for starter, trust me, this is a must – and the lobster with linguini is a favourite too (sorry, no picture). we don’t usually have dessert but tried the almond mille feuille, light and just perfect!

i can’t wait to go back!

homemade vegetable stock

during the past year i started “picking” on stock, every time i saw a recipe that involved chicken or vegetable stock in it, i would go arghhh and wouldn’t even consider it. sometimes it was a little frustrating, but i didn’t like the idea os buying something pre-made that i just can’t trust what is made of.

so last week i started looking for a vegetable stock recipe and give it a try…

it is sooooo easy – gather some vegetables and herbs in a pan, fill with water and simmer, then cook for an hour (you can find the instructions here). it is a great way to give use to unwanted veggie stems and stalks too.

the taste is way better and much healthier, you won’t go back to buying ready made stock again, i guarantee!

his dive story…

This was last Thursday when I took the morning off to go diving with some friends. It was a normal dive until the end when Dave our boat captain decided to spear a lion fish and tucked him between some corals. At first, I had no idea why this shark was all wild up about and he was circling and swimming at rapid speed.   He came out from nowhere. Then we saw it muscling in where the grouper was, trying to get at the lion fish and saw it swim away with the lion fish with two gulps!

Yummy! And wow!

we are starting off the weekend with a party at club pillows tonight – wouldn’t this be the perfect secret code when you want to leave a party and you really are going home? tomorrow i hope i make it to yoga in the morning – and sea, sun and sand for the rest of the weekend. hope you have a good one and can enjoy some sun shining too!
