fish sliders at the gansevoort


last week we went to the gansevoort for lunch, for a little celebration. we had the most delicious fish sliders, to die for, they came with a fennel and grapefruit salad – so fresh and perfect for a beach day in provo!

have i already mentioned how much i love fish!?

happy weekend + a few things

did  you see my first guest post on my blogshop friend, emily’s blog earlier this week?

happy weekend everyone! on monday its human rights international day, so we get a longer one!

…also, there are a few things going on in provo soon:

last week i helped out a friend at the tcspca, its amazing all the volunteer work they do to help save so many animals in turks and caicos, and they are organizing a beach bbq at bay bistro on November 10th at 7pm, the tickets are on sale in their office. its the least we can do!

remember my post on the fort george beach party, i totally recommend it, the next one will be on sunday 30 october, from noon until sundown, check here for more info.

tomorrow i am going to a free yoga class by david bowen at 10.30, its organized by the graceway sports centre and power 92.5, check the event on facebook here and sign up too. there will be a couple more!

parrot cay

i stumbled upon kris koeller’s blog and was perplexed looking at the beautiful pictures he took during his stay at parrot cay. check out more about his stay here.

parrot cay is a privately owned island just a quick boat ride away from providenciales. it is part of como hotels and resorts, featurng a high end beach resort and a few private houses. it is definitely on my to do list!

gazpacho

growing up on madrid, during summer, we had gazpacho almost every day. of course, i never got to do it, but a couple of years ago my friend Bea shared with me her recipe. its so easy to do, refreshing and healthy –  its one of those things i always like having in the fridge.

gazpacho = 8 ripe tomatoes + 1 green bell pepper, with no seeds + 1 cucumber + 2 cloves of garlic

whizz all up in the blender with water, olive oil and salt to taste, place in fridge before serving very cold. love it with some chopped boiled egg –  you can also add chopped onions, peppers, cucumber, croutons,  and so on.

in provo, try the one they have at the grill rouge (seen on picture).

what are your plans for the weekend?

after a few rainy days, the nice weather is back on track, it seems we will be having a great weekend ahead!

i will be doing some exploring on the jamie oliver magazine app that i have just downloaded on my ipad, with recipes to die for! so perfect for us in provo, as we don’t get the paperback issue on island.
